Image after Petr Exner's Vexilologický Lexikon prapory obcí ČR (2004) - Hlízov, Kutná Hora district, Central Bohemian region - adopted 5 Oct 2004 - the white thing is the root of a horse-radish (Armoracia rusticana), used for pickling gurkins.

Also known as Cochlearia Armoracia and Armoracia lapthifolia. Biochemists are fond of the horse-radish, from which they extract a peroxidase (enzyme) very useful for one of their tricks (staining something, I guess). The "horse-radish peroxidase"  adds some onces of poetry and spices to tasteless biochemistry articles.

...and also horseradish sauce, the eponymous accompaniment to the classic English meal of roast beef, the horseradish component being something like 29% to 43%, dependent upon which brand you buy.
